This tropical riff on an old fashioned has a buttery mouthfeel with a sweetness that is well balanced by the spices and a coconut flare brought by the Toasted Coconut Bitters.
All Spice Syrup
1 cup Demerara Sugar
1 cup Water
6 Allspice Berries
1 Whole Clove
1 Cinnamon Stick
Combine all ingredients in saucepan and bring to a simmer, stirring occasionally. Simmer for up to 5 minutes, or until sugar is dissolved. Turn off heat and allow to rest for 30 minutes. Remove solid materials and store in airtight jar in refrigerator.
2 oz Aged Dominican Rum (Bacoo 12 year)
.5 oz All Spice Syrup
2 dashes Remedy Cocktail Company Toasted Coconut Bitters
Build in double rocks glass, add large ice cube and gently stir to chill and combine. Garnish tropically.
